Hot Smoked Salmon Casserole
You’ll need:
- 80g butter
- 1/4 cup plain flour
- 1 1/2 cups pure cream
- 1 cup milk
- 1 cup grated tasty cheese block (500g)
- 1 brown onion, finely chopped
- 2 cloves of garlic finely chopped
- 425g flaked hot smoked salmon
- 2 cups of combined peas & corn heated through
- 1 cup fresh breadcrumbs
- 1/3 cup grated parmesan
Method:
Step 1.
Preheat oven to 200°C/180°C fan-forced. Grease an 8-cup capacity ovenproof dish or use an oven proof casserole dish to cook in.
Step 2.
Melt butter in a pan over medium heat. Add onion & garlic & fry off until onion becomes translucent. Add flour. Cook, stirring, for 1 minute or until bubbling. Remove from heat. Gradually stir in combined cream and milk. Return to heat. Cook, stirring constantly, for 3 minutes or until sauce boils and thickens. Remove from heat. Stir in half the cheese.
Step 3.
Add salmon, peas & corn. Mix well & season with salt & pepper. Spoon mixture into prepared dish if you have not been cooking in an oven proof dish. Combine breadcrumbs, parmesan & oil in a bowl & mix together until bread has soaked up the oil. Sprinkle over salmon mixture. Bake for 30 minutes or until cheese is melted and golden. Serve.
