
Tomato Relish
These sweet gems are just primed and waiting to be made into something stunning so with a few short hours you could fully stock your pantry with some goodies for the year.
How about a classic relish?? Everyone remembers their grandmothers relish in their sandwiches as the reason why these sandwiches tasted so good!!! So why not make a batch? We have bought out the old favourite recipe from the Country Womens Association cook book, which is a classic and we hope it puts a smile on your face the next time you have it in your lunchbox sandwich!!!
You’ll need:
- 6lbs ripe tomatoes
- 2lbs onions
- 2lbs sugar
- 2 tablespoons curry
- Small handful salt
- Half a teaspoon cayenne
- 2 and a half tablespoons mustard
- Vinegar to barely cover
Here’s what to do:
Cooking method (boiling)
Cut tomatoes in thin slices, put in dish and sprinkle with salt.
Cut onions up thinly, sprinkle with salt in a separate dish.
Leave both tomatoes and onions for 12 hours.
Pour off liquid and put together in saucepan with sugar and cayenne, and barely cover with vinegar. Boil for 5 minutes.
Mix curry and mustard with a little vinegar, add to other ingredients and boil 1 hour.
Allow it to cool and scoop into sterilised glass jars or bottles. Seal well.
