Zucchini Slice

Zucchinis will soon be in season, and they are one of those vegetables that go crazy in the home garden. So, if you have a few on hand- try this slice!

You’ll need:

  • 2 zucchini grated
  • 1 large onion finely chopped
  • 3 rashers bacon finely chopped
  • 1 cup tasty cheese
  • 150gm Greek fetta crumbled
  • 1 cup SR flour
  • ½ cup of oil
  • 5 eggs
  • 10 cherry tomatoes halved
  • Fresh chives for garnish
  • Salt & pepper

Here’s what to do:

  • Preheat oven to 170 degrees C. Grease and line a non-stick lamington tin.
  • Combine, zucchini, onion, bacon, flour & cheese in a large bowl. Add oil and lightly beaten eggs, and mix. Season with a little salt & pepper. Pour mixture into your prepared lamington tin. Crumble fetta & arrange tomato halves cut side up and chives on top in a neat pattern.
  • Bake for 35 – 40 minutes or until golden on top and set. Allow cooling slightly before cutting.

P.S. You can leave out the bacon for the vegetarians among us. Also, the tomatoes if the kids don’t like them!!!
